Independence Day Cupcakes

Whew, getting this one in just under the wire. If you’re like me, a procrastinator, then this might just be the recipe for you! I had been thinking over the last few weeks about doing a special cupcake for the upcoming holiday, and had the grandiose ideas about red velvet, blueberry filled, cream cheese iced monstrosity. The more I thought about it though, the more I didn’t think some elaborate mashing up of so many flavors would really turn out all that well. So I scrapped that idea and went back to square one. Then, this little gem caught my eye when I was off searching for some other cupcake recipes and I knew this was what I wanted to do.

Patriotic Cupcakes

Cute, easy to make, and delicious (still used the cream cheese frosting)!

As a bonus holiday recipe, my friends over at Foodwhirl found these adorable dipped strawberries. Considering that strawberries are in season right now, I think this is a perfect treat for a hot day with friends and family.

Pineapple Upside-down Cupcakes

It’s a known fact, smaller = more cute. It’s just one of those laws a nature like gravity, conservation of mass, and always getting stuck in traffic when you really need to pee. I saw a can of pineapple rings in my pantry over the weekend and was struck with the idea of Pineapple Upside-down Cake, but almost immediately on the heels of that though came it idea to miniaturize it into cupcakes. Now, I think new and original ideas are a dying species, so I wasn’t surprised to see after a quick check of the Googles, that there are lots of other people who’ve thought about shrinking this awesome dessert too!

Ice Cream Cupcakes

Two of my favorite desserts have been combined…and my brain threatens to explode from the sheer awesomeness contained therein.

That’s right, you read correctly. Ice Cream + Cupcakes. Much like peanut butter and jelly, chips and salsa, and Sonny and Cher (oops!), this is a pairing of epic proportions. A combination to rival all such unions. One that will go down in history as a top desserts, bar none. Okay maybe that last bit is a trifle exaggerated…but not by much 😉

Joy the Baker has posted not one, but two versions on this delightfully delectable decadence (like what I did there??). I can think of nothing more refreshing (that does not involve an adult beverage) on a hot summer day then popping one of these gems into my mouth.

Dr. Seuss Cupcakes

Cupcakes, in my humble opinion, are one of the supreme foods in all the universe.  Tiny, portable, infinitely customizable in substance, filling, icing and garnishments; and great for sharing…oh and did I mentioned generally delicious! Thus you can see the nature of my penchant for these little cups of delight.

I am shamelessly stealing this link from a friend who posted it on Facebook earlier today. It is just too awesome not to share. Without further ado, I give you Dr. Seuss Thing 1 and Thing 2 Cupcakes!

These not only give you the yummy of the cupcake, but combine it with the fun and sugary confection of cotton candy! The original creator notes however, not to apply the cotton candy until just before serving, or it will melt into a puddle of runny blue liquid on the tops of your cupcakes. With a growing baby in my house and a love for classic children’s tails, I dare say the likely-hood of a Dr. Seuss party in my future is fairly high.
